Since Juan Gil Jiménez opened the winery in 1916, a single idea has guided the successive generations who have taken the reins:

Juan Gil Guerrero, the founder’s son, and later his grandson, Juan Gil González, improved and consolidated the winery, applying the traditional knowledge of the craft passed down from father to son. Today, the fourth generation continues this tradition while embracing technological innovation. With the construction of the new winery, much has changed. Modern winemaking requires technology: rigorous control of fermentation temperatures, stainless steel tanks, and impeccable hygiene throughout the process ensure consistently high-quality wines each year. However, fine wine is not only ‘made’ in the winery since the vineyard comes first. The winery’s location next to the vineyards allows for careful monitoring of grape development, a crucial factor in producing exceptional wines.

Our vineyards sit at altitudes between 700 and 850 metres, on sandy, calcareous soil, stony on the surface and very low in nutrients, yet with excellent water retention. This is the kingdom of Monastrell, the region’s native grape, present either exclusively or in very high proportion in all our wines. Alongside old Monastrell vines of over forty years and younger Monastrell plants, we also cultivate Syrah, Cabernet Sauvignon, Merlot, and Petit Verdot, which adapt well to the terrain and contribute rich notes of spice and fruit.

The harsh conditions imposed by the climate and soil lead to low yields, small, concentrated grapes, resulting in wines with great structure, flavour, and intense colour and aroma. These are wines with character, born of the land from which they come. The recognition from our clients and consumers confirms that our efforts are well rewarded. We are on the right path.
